• Additional research from reliable sources on the Internet for ex: WebMD, ChooseMyPlate.gov, Cleveland Clinic, or PubMed.
• Do not use unreliable sources such as Livestrong, magazine articles.
• 3 pages, Arial 10, single spaced. Topic title.
• Near the top of page one, write a brief 5-7 sentence introduction describing the disease, nutritional problems related to the disease, and an overview of how you plan to address the dietary needs for this patient.
• Below the introduction insert a table with two main columns. Use bullets. Continue the same table until the last page.
• In one column list the foods you would choose for meals for one week.
• In the opposite column list specific health benefits of that food. Do not simply list weights of nutrients or kilocalories. Explain which particular ingredients such as individual vitamins, amino acids, fiber, anti-oxidants, particular major minerals such as potassium, calcium, trace minerals like zinc, selenium, chromium, would provide specific health benefits.
• Group meals as follows: First list the Breakfast items, followed by Snacks, Lunch, Dinner and an after-dinner snack. List Beverages as needed.
• Meet nutritional needs of the whole person; do not focus on disease only
• List sources at the bottom of page 3 (MLA format not necessary).
• Example of Format:
• Oatmeal with blueberries, flax seed • Oats: may reduce the risk of heart disease; whole grain rich in vitamins and fiber; soluble fiber helps excrete cholesterol through the large intestine; relieves constipation, improves digestive health; contains complex carbohydrates which help regulate normal blood sugar levels; potassium lowers blood pressure
• Blueberries: prevent free radical damage; ant-cancer & anti-inflammatory because they are a good source of antioxidants; their anthocyanin pigments benefit cognitive functions and memory and may promote urinary health
• Flax seed: contains omega-3-fatty acids which is an anti-inflammatory, promotes heart health, protects against coronary artery disease and may lower cholesterol.
• If a food is especially high in a particular vitamin ex: Vitamin B6 or a mineral ex: potassium or chromium, then mention those with their specific health benefits: for ex: kale has highest Vitamin K, promotes bone health ; vitamin C rich foods such as red bell peppers enhance the absorption of iron from plant sources; Brazil nuts contain the most selenium which lowers LDL cholesterol; also contain Vitamin E an anti-oxidant and it protects mucus membranes; Milk is rich in calcium & vitamin D for bone health, vitamin A for cell repair and vision, high in riboflavin, used as FAD in energy metabolic pathways.

• Focus on the whole body as well as the disease.
Be succinct. Keep the intro short. This is a science class. We expect your reader to have basic scienctific knowledge so don’t explain things as you would to a layman. This is not an english paper or a magazine article. Give scientific details and move on. We don’t need long wordy sentences. See my examples under the guidelines for this project and see the cut-and-dried language that is used. Use commas and semicolons to squeeze in a lot of information. Manage your table columns so that you don’t have wasted white space in one column and very crammed in the other column.
• Don’t be vague. Don’t simply say vitamins and minerals. Say which specific one in which particular food. Don’t simply say B vitamins. There are many. Tell which specific B vitamins. Vitamins are always uppercase letter for the name, and minerals are always uppercase for the first letter. Study your chapters 9 through 13 powerpoints and figure out which other chapters you need to read that relates to your particular disease. Remember you must use all the fat soluble, water soluble vitamins, major minerals and trace minerals and also study the 3 macronutrients proteins, carbs and fats and water for this project.

• Be careful when you review and edit. Avoid spelling mistakes, grammatical errors and chopped up phrases that don’t make sense.

• Do not mention any pills, commercially available nutritional supplements, commercially available protein bars, or exercise. This is all about a menu plan only. Choose real foods.
• No cheat foods like cookies, cakes, fast food, preserved meats like sausage bacon of any kind. Some fad diets ask people to cheat for one day and eat all the junk food they crave. Such diets are wrong.
• Do not make your client vegan or vegetarian. Age and gender can be up to you but choose something that makes sense. A 25 year old man is unlikely to have osteoporosis, so use your judgment.
